Quickly knead the ingredients with cool, clean hands into a dough ball. If the dough crumbles a bit, you can add a little milk. Wrap the dough ball in cling film and let it rest for 1 hour in the refrigerator. Then roll out the dough into a large sheet about 0.5 cm thick. Cut the cookies out of the dough with a glass or cookie cutter and place them side by side on a greased baking tray. Brush the egg white over the cookies with a small brush and bake them in the middle of a preheated oven (175°C) for about 20 minutes until done and lightly browned. After baking, let cool and store in an airtight tin.
