    Ripasso is a special way of making wine. He is wrong twice. After the harvest, a normal red wine is first made. It's called Valpolicella. The winemaker adds the skins of dried grapes to this wine. Those grapes have previously been used for Amarone, another wine from the same region. Then the fermentation starts again. The dried peels give the Valpolicella extra coloring and flavoring substances, giving it a fuller, richer taste. Valpolicella Ripasso is delicious as an evening wine, with a spicy cheese on the side, and it goes well with a hearty pasta and roasted meat.
