Costa Ligure is an Italian family business from Liguria, Italy. Liguria is the birthplace of pesto and they have been making pesto at Costa Ligure for generations. The word pesto is derived from the Italian word 'pestare' which literally means 'to pound'. The traditional recipe of the pesto rosso contains tomatoes, Italian cheese (pecorino romano), pine nuts and extra virgin olive oil as the main ingredients. In this vegan variant, the Italian cheese has been replaced by the patented mozzarella cheese, a vegan cheese alternative based on rice. That is why, unlike many other vegan pesos, this pesto does not contain soy.
