Emiliana Organico sees the soil as a living organism in which the visible and invisible forces connect to create healthy ecosystems. In their view, this contributes to social prosperity and better wine. Coyam stands for a Chilean oak tree and refers to the trees around the vineyards. The word comes from the language of the Mapuche Indians.
