The Longaniza de Pages is a special sausage with an intensely spiced flavor and a natural mold coating that enriches the taste even more. The recipe dates back to Roman times. Originally made in the Pyrenees and later spread across the countryside, but only where the weather conditions allow the Longaniza to dry naturally in the proper way. Often served with lightly toasted baguette, pieces of tomato, freshly cut basil, and olive oil. Only Spanish pigs are selected for this Longaniza de Pages. Dried and matured for at least 8 weeks in a natural environment.
