    This cava is made from macabeo, xarello and parellada, grape varieties that are native to the Penedés. A regular white wine is first made from those organically grown grapes. That still wine goes into the bottle with some fresh yeast and sugar, the cork is placed on it and then a second fermentation starts in the closed bottle. During fermentation bubbles are always released, but now they cannot go away. This creates this sparkling wine that was then left in the cellar for another year for extra taste. It has the fruitiness of apple and pear and the spicy of lemongrass. Very refreshing. Delicious to drink as is and with spicy snacks. There is also a cava rosé from the same brand, which has the soft taste of ripe strawberry.
