Cava is a sparkling wine from the north of Spain that is made in the same way as champagne, but from different grapes. These give this fruity sparkle a slightly spicy note. Especially tasty with tapas. From these organically grown grapes, a regular white wine is first made. This still wine is then bottled with some fresh yeast and sugar, corked, and a second fermentation begins in the sealed bottle. Fermentation always releases bubbles, but now they cannot escape. This creates the sparkling wine, which then rested in the cellar for another year for extra flavour. It has the fruity notes of apple and pear and the spicy hint of lemongrass. Very refreshing. Nice to drink on its own and with spicy snacks. The same brand also offers a rosé cava, which has the soft taste of ripe strawberry.
