Shopping list for Asparagus Cream Soup with lots of vegetables for 3 portions of soup:
3 slices of ham (of your choice), 160 grams of white asparagus (fresh or from a pot (drained)), 1 egg, 5 grams of fresh chives.
Preparation method:
1. Peel the asparagus and cut it into pieces.
2. Boil 0.75 liters of water and add the asparagus and the contents of one bag of Asparagus soup.
3. Bring everything to the boil while stirring and let it simmer for about 10 minutes, until the asparagus is done.
4. Meanwhile, hard-boil the egg in another pan for about 10 minutes. Rinse in cold water and peel the egg. Mash the egg and cut the ham slices into small pieces. Cut the chives into narrow pipes.
5. Then remove the stockpot from the heat and scoop out some pieces of asparagus and keep them aside for garnish. Puree the rest of the asparagus soup with a hand blender until it is smooth.
6. Divide the soup among the bowls and garnish the soup with the pieces of asparagus, egg, ham and chives.
Note: If there are no white asparagus for sale, use white asparagus from a pot. The cooking time in step 3 is then not 10 minutes, but 1 minute.
Tip: For an extra creamy asparagus soup, add a dash of cooking cream before pureeing the soup. Enjoy your meal!
