- 375 g lean ground beef
- 150 g corn (canned)
- 5 tomatoes
- 2 red bell peppers
- 2 onions
- 100 g full-fat quark
- Oil
Preparation
1. Finely chop the onions. Cut the tomatoes and bell peppers into cubes. Heat 1 tablespoon of oil in a large frying pan and brown the ground beef until crumbly.
2. Add the bell peppers and 1 onion and fry for about 3 minutes. Then add the drained corn, the spice mix, and 100 ml of water and cook for about 2 minutes.
3. Mix the dressing mix with 2 tablespoons of oil and 2 tablespoons of water and combine this with the tomato cubes and the remaining onion.
4. Mix the sauce mix with the quark and 3 tablespoons of water and stir well.
5. Remove the wraps from the packaging and warm them for 30 seconds in the microwave (650 W). Spread part of the sauce on the wraps and distribute the ground beef mixture and some salad over them. Fold the wraps closed. Serve the enchiladas with the remaining salad and sauce.
Tasty variations:
Tip from The Vegetarian Butcher: Replace the ground beef with 2 packs of Rul Gehackt. In step 1, only cut the vegetables. In step 2, add the Rul Gehackt after the spice mix.
Tip from the greengrocer: Replace the ground beef with 1 yellow bell pepper cut into cubes, fry this with the vegetables in step 2. Also add 200 g drained black beans (canned) at the end of step 2.
Variation tip: Replace the corn with 250 g sliced mushrooms and fry with the vegetables in step 2.
