You should really try a full, white wine like this wood-aged Chardonnay with poultry, for example with a creamy coq au vin or pork tenderloin with mushrooms. He comes from Casablanca, one of the cooler areas in Chile that is very suitable for growing chardonnay. The grapes ripen slowly in the sandy, poor soil, which ensures intense aromas and fine acids. Part of the wine is stored in stainless steel after fermentation and retains a fresh, fruity taste. The rest ripens in wooden barrels and therefore becomes rounder, softer and spicier. Over time, the wines are merged and you get a full wine with a fresh aftertaste. Novas comes from Emiliana Organic Vineyards, the first Chilean winery to be officially certified for their biodynamic viticulture.
