Usage
Preparation: Ingredients for 4 people: 1 finely chopped onion, 4 tbsp (olive) oil, 15 g butter, 350 g AH risotto rice, approx. 1 liter liquid (1 liter stock, 100 ml white wine). 1. Heat the (olive) oil in a pan and fry the onion until it is translucent. 2. Add the risotto rice and stir. 3. Add the wine and let it reduce completely (approx. 2 minutes). Then add the stock little by little and let it absorb and evaporate while stirring continuously (approx. 16 minutes). 4. The risotto rice is ready when the outside is soft, but the inside still has a firm bite. For a softer grain of rice, cook longer.5. Remove the risotto rice from the heat source and stir in the butter.
