For this orange chardonnay, the grapes were fermented with the skins. This gives it that warm color, an extra fragrant taste including notes of orange, and a somewhat fuller body. This means that the juice is not separated from the skins as is usual with white wine, but the whole grape goes into the fermentation vat. Because the skins contain coloring matter, aromas, and tannins, the wine becomes darker, fuller, and firmer. Its hue changes from yellow to orange, hence the name. El Zorrito has a rich flavor with flowers, honey, orange peel, and crisp apple acids reminiscent of cider. Because of all that fragrance and its bite, it pairs well with spiced couscous or curry and goes perfectly with ripe cheeses. El Zorrito, Spanish for little fox, is a natural wine without added sulphites.
