At Settesoli they like to work with their own Sicilian grapes such as nero davola and grillo, but they also make wine from pinot grigio, for example. You may know them mainly from Northern Italy. Usually a white wine is made from the pinot grigio, but rosé is also possible. This is because the skin of this grape is not white or light green, but pinkish red. If the winemaker leaves the skins in the juice, some of the dye will come out and you'll end up with a pale pink wine like this. Blush wine, they also call it, a wine with pink cheeks. It has the freshness of a white Pinot Grigio and the fruity aromas of raspberry and strawberry, as in many roses. The soft aftertaste is characteristic of Sicily. Delicious to drink with and try it with a spicy Moroccan dish.
