    Hello, I am Lieuwe Nicolai, a sausage maker through and through. Together with my wife Francisca Nicolai, I took over the butcher's shop in Oosterwolde from my parents in 1996. I am the 4th generation butcher in the family, my great-grandfather started this family tradition in 1910. We have a butcher's shop where we focus entirely on fresh meat, sausage and meat products. Animal welfare is of paramount importance to us, a cow belongs in the meadow and a pig should also be able to roam outside. In our butchery we only process Livar monastery pigs and are also independently certified for this. In the sausage making industry I work with single spices and herbs. This way I can tailor the products exactly to the consumer's taste. Because of this way of working, I have regularly won prizes at professional competitions.
