    At Tilia, the grapes grow in pergolas, which you often see in Mendoza. Instead of keeping the vines low, they are led up along poles and the leaves then form a kind of natural roof under which the bunches hang. That roof protects the grapes against too much sun and heat, giving them plenty of time to ripen evenly. The grapes become so much more fragrant and therefore the wines too. The high-rise also saves backs because the pickers can remain upright during the harvest. The wine is named after the tilia, the lime tree that is common in Mendoza. You can make a delicious, muscle-relaxing tea from the blossom of the tilia.
