This is because winemaker Rebecca Wiffin lets part of the wine mature in stainless steel tanks, as usual, and a very small part, namely 1%, she ages in wooden barrels. That is rare. Because of this barrel ageing, the wine becomes softer and rounder. Perhaps a bit too soft for a sharply dry, invigorating sauvignon, but Rebecca blends the wine from tank and barrel after some time, and then it turns out that this sparkling fresh wine has gained a pleasant soft edge through the barrel ageing.
