Ortola: 'I call Château Tapie a cross-generational wine. It is robust with the strong scent and flavour that have belonged to our soil since Roman times, yet it feels very soft. And that is the new, modern side of our wine. We have achieved this combination of strength and softness through organic farming. The soil is healthier and more vital, so the plants have more resistance and the grapes develop better. They now fully ripen, including the skin and seeds. These contain the tannin that gives the wine its firmness. Unripe tannin feels rough in your mouth, ripe tannin provides a soft "bite". For Château Tapie we use four different grape varieties: syrah, grenache, mourvèdre, and carignan. This blend makes the wine richer and fuller. And tastier!'
