Constantia Uitsig White Sauvignon

The winery has a long history dating back to 1685. There have been good and bad times, but since 1990 it has been doing very well. The people who took over then have focused on growing sémillon, sauvignon blanc, and chardonnay. These three white varieties benefit in Constantia from the eastern location of the vineyards and the cool sea breeze, which allows them to ripen evenly and retain their fresh acidity. Uitsig’s Sauvignon Blanc is dry and fresh with aromas of grass, peach, and lychee. Because it is fermented in stainless steel and concrete vats, these fruity aromas come through clearly. Maturation sur lie (= on the lees) gives it body. This invigorating wine is perfect as an aperitif and pairs well with green asparagus, salad with goat cheese, and pasta with salmon.
