Durum wheat semolina pasta "Traditional production methods that remain faithful to our 125-year-old family recipe. Since 1886, we have chosen the finest durum wheat grown in Italy and around the world to guarantee pasta with unique qualities. Before milling, our wheat undergoes a strict quality check to ensure we keep our promise. The semolina we use for kneading is 'flat' to preserve the integrity of the gluten and ensure a 'sweeter' taste. We knead the semolina with cold water at a temperature below 15°C for better firmness during cooking. We let the pasta dry slowly at low temperatures to preserve the sensory qualities of our wheat."
