In the past, glera was also called prosecco, which is how this popular bubbly got its name. Prosecco is produced according to the so-called charmat method. It begins its life as an ordinary, dry white wine which, once ready, is placed with sugar and yeast in a tank. The addition of sugar and yeast causes the wine to ferment again. This produces carbon dioxide that cannot escape from the sealed vat. The winemaker decides on the pressure of the carbon dioxide. A spumante, like this AH Excellent Prosecco, fizzes fully and has a higher pressure than a frizzante. The latter fizzes more gently.
