In the 1950s, Jan Stok worked in the ship’s galley of the Holland–America Line. As “chef garde manger,” he was responsible for the cold dishes. His French colleagues soon gave him a new name: Jean Bâton, a literal translation of Jan Stok. Under that name, he became especially known for his delicious sauces. As a tribute to his craftsmanship, our special mayonnaises, sauces, and dressings bear his name.
