That is quite a pity, because sherry is a special wine, almost a natural phenomenon. It develops its distinctive flavor in the cellar. There are two styles of dry sherry, namely fino and oloroso. Fino forms a layer of yeast cells on its wine, the 'flor', which protects the wine from light and air. As a result, it retains its pale color and fresh taste. Oloroso is a sherry without that 'flor' and becomes dark in color with a nutty, riper flavor. Medium sherry is a half-sweet oloroso and cream is a sweet one. Fino is a dry, delicate sherry with body.
