Fino forms a layer of yeast cells on its wine, the 'flor', which protects the wine from light and air. As a result, it retains its pale color and fresh taste. Oloroso is a sherry without that 'flor' and becomes dark in color with a nutty, riper flavor. Medium sherry is a semi-sweet oloroso and cream is a sweet one.
