This dry rosé, full of red fruit, comes from the Languedoc. It is made from Syrah and Grenache. The winemaker leaves the grapes to macerate briefly with their skins in the juice before pressing the grapes gently. This way, just enough pigment seeps from the blue skins into the grape juice, which has hardly any colour of its own. After that, the winemaking process for rosé is the same as for white wine.
