He has done everything to ensure a fresh, fruity flavor. First, the grapes were picked at night, at a temperature below 12 degrees Celsius. Harvesting cool prevents the delicate aromas from being lost. The fermentation also took place at a low temperature, which brings out the distinctive fresh and fruity notes of both the Airén and Verdejo grapes. Thanks to technological advances, such lively wines can now be made in Valdepeñas. In the past, without temperature-controlled equipment, it was far too hot in summer to produce this type of wine. Félix Solís has been established in Valdepeñas and La Mancha since 1975 and is known for his forward-thinking approach to winemaking.
