It is made in the same way, but from different grape varieties. For this one, only the Spanish macabeo grape was used. The bottle says 'metodo tradicional', the traditional method. This means that after the harvest, an ordinary, dry, still wine was first made which, when ready, was bottled with some sugar and yeast. In the sealed bottle, the wine began to ferment again, creating bubbles which, unlike in an open vat, could not escape from the closed bottle. This dry, lively sparkle with apple, pineapple, and citrus is very refreshing as an aperitif and also lovely as a lunch or picnic wine.
