Moselland Late Harvest
Spätlese literally means “late harvested”. And that’s exactly what happens with the grapes for this sweet white wine. Because they can ripen in the sun for a long time, the grapes have built up plenty of sugars by the time they’re picked. And of course that makes them nicely sweet. Which means this German wine pairs really well with Asian dishes. For years, Spätlese was known as extremely sweet, because in Germany the grapes grow in a cool climate and ripen slowly. And the longer they hang on the vine, the sweeter they taste. After fermentation, there are often still quite a lot of unfermented residual sugars left. Nowadays, it’s possible to ferment all the grape sugars, resulting in a much drier Spätlese.
