The climate is fairly cool and the vineyards have a special, mineral-rich chalk soil. The grapes develop refined acids and delicate aromas of apple, citrus, and exotic fruits. Nothing dominates, everything is in balance. A delightful wine to enjoy just like that (in the sunshine) and to drink at the table. For example, with salads with goat cheese, asparagus, shrimp, and light fish dishes.
