What stands out about these cavas is their very fresh style. Normally, cavas are somewhat riper and spicier in taste, but the house style of this winery is praised for its fruitiness and freshness. The quality of Coleccion Privada Cavas can be traced back, among other things, to the longer aging in the cellars than legally required: the wines mature 18 to 20 months on their lees instead of the required 15 months. This results in an extra soft foam and a refined taste.
