Beneath the house lies a cellar 30 metres deep with a total length of 18 kilometres. These cellars can be visited, where you can see how the champagnes mature. The Pommery Noir has spent at least 15 months there. It consists of equal parts pinot noir, pinot meunier, and chardonnay. Its taste is fresh with citrus fruit and blossom honey. It is a brut, so dry, but with a kindly soft edge due to the dosage of 10 grams per litre. The dosage is the mixture of wine and sugar with which champagne is flavoured just before the final cork is put on.
