A natural source of nutrients
A great base for a salad or soup
300 g split lentils
400 ml coconut milk
1 red chili pepper
1 can peeled tomatoes
1 onion
2 cloves of garlic
2 vegetable stock cubes
Add yourself: herbs and spices to taste
Finely chop the onion and garlic and sauté them in the pan.
Add any optional herbs.
Add the peeled tomatoes and stir well.
Add the vegetable stock with water and then the lentils (first soak them as indicated on the packaging).
Cut the chili pepper in half and remove the seeds. Add the pepper and let it cook with the soup.
Add the coconut milk.
Let it simmer for 20–30 minutes and blend into a rich, smooth soup.
