Shopping list for Beef Shanghai:
225 g lean ground beef, 250 g mushrooms, 1 onion, 125 g bean sprouts, 3 spring onions, 1 leek, and oil

Preparation:
1. Mix the spice mix with the ground beef. Shape into small meatballs (about 15 pieces). Finely chop the onion and quarter the mushrooms. Cut the leek into half rings and the spring onions into thin rings.
2. Meanwhile, heat 1 tablespoon of oil in a frying pan and fry the meatballs until cooked through. Keep them aside on a plate. Add another tablespoon of oil to the pan and fry the mushrooms, onion, and leek for about 3 minutes. Then add the bean sprouts, 350 ml water, and the sauce mix. Stir and bring to a boil, then let it simmer gently for about 3 minutes. Add the meatballs and warm them through for about 1 minute.
3. Meanwhile, cook the noodles in plenty of boiling water for about 3 minutes until done. Loosen the noodles with a fork and then drain. Return the noodles to the pan, add the spiced oil, and mix well.
4. Sprinkle the sauce with the spring onions and serve the noodles and sauce separately.

Tip: Replace the ground beef with a pack of Raw Mince from The Vegetarian Butcher. Or replace it with 230 g drained baby corn (canned) cut into pieces and add these to the vegetables in step 2. Marinate the mushrooms with the spice mix in step 1.
