Shopping list for Mexican tacos:
225 g lean minced beef, 1 courgette, 2 tomatoes, 150 g corn (canned), 100 g iceberg lettuce, and oil.
Preparation:
1. Preheat the (fan) oven to 150°C. Cut the courgette and tomatoes into small cubes. Cut the lettuce into fine strips.
2. Heat 1 tablespoon of oil in a frying pan and crumble-fry the minced beef. Add the courgette (cubes) and drained corn. Fry for about 3 minutes. Then add the spice mix and 150 ml water. Bring everything to a boil while stirring and let it simmer gently for about 3 minutes.
3. Remove the taco shells from the package and place them upside down on the oven rack. Warm them in the oven for about 5 minutes. Mix the sauce mix with 150 ml cold water and stir well.
4. Fill the taco shells with the minced beef mixture, some lettuce (finely chopped), and tomatoes (cubes). Serve the filled tacos and the taco sauce separately.
Tip: A day without meat? Replace the minced beef with a pack of Rul Gehackt from The Vegetarian Butcher. Add the Rul Gehackt after the water. Or replace the minced beef with 200 g black beans (canned). Add these together with the corn.
