Autumn in the Netherlands is a season full of coziness. The scent of stewed pears, a plate of speculaas cookies on the table, and a warm cup of hot chocolate are simply part of it. For Dutch people living abroad, these are exactly the things you often miss once the days get shorter.
Where in the Netherlands you can easily find stewed pears, baking mixes, or speculaas spices, it is often much more difficult outside the country's borders. Baking a crumb cake or putting a plate of speculaas on the table suddenly isn't so obvious anymore.
Making speculaas yourself is also quite doable abroad.
Preheat oven to 160º Cut butter into the flour, brown sugar, baking powder, and speculaas spices. Knead this into a dough with cool hands. Roll out the dough to 1½ cm thick and place it on the baking tray lined with baking paper. Push up the edges slightly. Bake the speculaas for about 30 minutes until cooked and brown. Cut into pieces immediately and press the almonds on top. Let cool. Don’t wait too long to eat it, because it is terribly delicious.
