Durum wheat semolina pasta
"Traditional production methods that remain true to our 125-year-old family recipe. Since 1886, we choose the best durum wheat produced in Italy and in the rest of the world to guarantee a pasta with unique qualities. Before it is ground, our wheat undergoes a strict quality control to make sure we keep our promise. The semolina we use for kneading is 'flat' to preserve the integrity of the gluten and ensure a "sweeter" taste. We knead the semolina with cold water at a temperature below 15 C for better firmness during cooking. We let the pasta dry slowly at low temperatures to preserve the organoleptic properties of our wheat."
Usage
6 liters of water in a pot
Cook at 100°, add salt
Add 500 g pasta and cook for 9-11 minutes.
Drain the pasta
Cooking time: 9 - 11 min.
