Then Josep Raventos i Fatjo, a Codorniu descendant, ventured into the bubble. He had visited Champagne and learned how the bubbles get into the wine there. At home in the Penedes he followed the same method. Because Josep used Spanish grape varieties, his sparkling wine got a completely unique look. And cava still has that.
