Constantina Uitsig Sauvignon Blanc

    Constantia Uitsig is located on the south side of Cape Town, between Constantiaberg, False Bay and the beautiful suburbs of the city. The winery has a long history dating back to 1685. There were good and bad times, but since 1990 things have been going great. The people who took over then focused on the cultivation of semillon, sauvignon blanc and chardonnay. In Constantia, these three white varieties benefit from the eastern location of the vineyards and the cool sea breeze, which allows them to ripen evenly and retain their fresh acidity. Uitsigs Sauvignon Blanc is dry and fresh with aromas of grass, peach and lychee. Because it was fermented in stainless steel and concrete vats, those fruity aromas are clearly evident. Maturation sur lie (on the yeast residues) gives it body. This stimulating wine is perfect as an aperitif and goes well with green asparagus, salad with goat cheese and pasta with salmon.
