Sherry is, like champagne, a blended wine. It consists of wines from various harvest years that are mixed according to the so-called solera system. A solera system consists of several layers of barrels. From the bottom layer, a portion of sherry is taken and bottled. This layer is then replenished with sherry from the layer above, and so on. The newest harvest goes into the top layer. This is how Domecq and all other wineries in Jerez, the town in Andalusia where all sherries come from, operate.
