Ísey Skyr is produced using modern technology, but still follows the traditional recipe. The product has a unique preparation process, using 3.5 times as much milk as regular yoghurt or quark, and the original Icelandic skyr cultures are added. By removing the liquid from the skyr at the end of the process, you get a creamy texture without losing any protein!
