    Preparation: Recipe with lots of vegetables Shopping list: • 1 red onion • 1 onion • 1 zucchini • 2 red pointed peppers • 250 g cherry tomatoes • 85 g arugula • 50 g Parmesan cheese, grated • Oil How to make it [45 min / Oven : 20 min] 1. Preheat the (convection) oven to 200˚C. Cut the zucchini into half rings (1 cm thick), the pointed peppers into cubes and the red onion into thick half rings. Halve the cherry tomatoes. Chop the onion and keep it aside for step 3. 2. Mix the zucchini, pepper and red onion with the spice mix and 1 tbsp oil. Divide it over a baking tray lined with baking paper and bake the vegetables for about 15 minutes. After 15 minutes of baking time, add the cherry tomatoes and fry for another 5 minutes. 3. In the meantime, heat 1 tbsp oil in a saucepan and fry the onion until translucent. Add the Orzo pasta, the spice mix and 600 ml water and bring to the boil. Let it simmer gently for about 15 minutes with the lid on the pan. Stir occasionally. The Orzo should be creamy when served. 4. Divide the Orzo among the plates and place the grilled vegetables on top. Then divide the arugula and Parmesan cheese over it and serve immediately. Save energy? Prepare the Orzo in step 3 in the oven, at the same time as the vegetables. Fry the chopped onion in 1 tbsp oil in a saucepan until translucent. Add the Orzo paste, spice mix and 500 ml water, stir well. Pour the mixture into an oven dish, cover with aluminum foil and let the Orzo cook for about 20 minutes.
