Shopping list:
- 375 g chicken breast (cubes)
- 400 g oriental stir-fry vegetables
- 3 spring onions
- 2 cucumbers
- Oil
How to make it:
1. Mix the spice mix with 2 tablespoons of oil and marinate the chicken breast cubes in it for about 10 minutes. Cut the spring onions into thin rings and slice the cucumbers.
2. Meanwhile, cook the noodles in plenty of boiling water for about 10 minutes until done. Drain the noodles, rinse with cold water, and let drain.
3. Heat 3 tablespoons of oil in a large wok and stir-fry the vegetables for about 2 minutes. Then add the sauce mix and 100 ml of water. Add the noodles and stir-fry for about 1 more minute.
4. Meanwhile, heat a frying pan and fry the chicken cubes until golden brown and cooked through. Add the spring onions and warm for about 1 minute.
5. Mix the dressing mix with 3 tablespoons of oil and 3 tablespoons of water. Toss the cucumber slices with the dressing.
6. Serve the Cantonese chicken on the noodles and the cucumber salad separately.
Tasty with less meat:
Tip from The Vegetarian Butcher: Replace chicken breast with 2 containers of Chicken Pieces. In step 4, briefly fry the Chicken Pieces until golden brown; they are already cooked.
Tip from the greengrocer: Replace the stir-fry vegetables with 250 g sliced chestnut mushrooms and 125 g bean sprouts.
