Shopping list for Hokkien Noodles:
225 g chicken breast (cubes), 400 g stir-fry vegetables, 125 g mushrooms, 1 onion, and oil
Preparation:
1. Soak the vermicelli in 1 litre of cold water for 15 minutes. Drain and let it drain well.
2. Cut the chicken breast into cubes. Mix the spice mix with 2 tablespoons of oil and marinate the chicken cubes in this for about 10 minutes. Cut the mushrooms into quarters and roughly chop the onion.
3. Heat a wok and stir-fry the chicken until golden brown and cooked through. Add the mushrooms and onion and fry for about 2 minutes.
4. Then add the stir-fry vegetables and cook for about 5 more minutes. Then add the herb mix and 50 ml of water. Stir-fry everything for about 2 minutes.
5. Meanwhile, cook the noodles for 3 minutes in plenty of boiling water. Loosen the noodles with a fork and then drain.
6. Add the noodles, vermicelli, and chicken mixture together. Stir well and heat the dish for about 2 minutes more. Serve the Hokkien Noodles.
