Preparation:
Preheat the (fan) oven to 190˚C. Cut the courgette into cubes. Slice the 3 tomatoes and set them aside. Then bring 500 ml milk, 500 ml water, and the sauce mix to a boil in a pan, stirring with a whisk. Let it simmer gently for about 3 minutes. Meanwhile, heat 1 tablespoon of oil in a large frying pan and crumble-fry the minced meat. Add the Italian vegetable mix and the courgette and fry for about 3 minutes. Then add the sauce to the mixture and stir well. Now cover the bottom of a large greased oven dish with a layer of sauce and place a layer of lasagne sheets on top. Repeat until the lasagne sheets are used up, finishing with a layer of sauce. Place the tomato slices on top and sprinkle with grated cheese. Let the lasagne bake for about 35-40 minutes until golden brown in the middle of the oven.
