    Mexican Quesadilla’s Recept voor 4 personen Ingrediënten: 8 tortilla’s (20 cm), 350 g kippendijfilet, 1 blik La Morena Bayo Beans with Chipotle and Adobo (Bayo bonenspread met Chipotle), 2 tl gerookt paprikapoeder, 1 paprika, 4 bosuitjes, 150 g maïskorrels, Pittig geraspte kaas, La Morena Homemade style Mexican salsa. Bereidingswijze:,1. Snijd de kippendijfilet in smalle reepjes en kruid met paprikapoeder, peper en zout. Verhit een scheut olie in een pan en bak de kip gaar. 2. Snijd de bosuitjes in ringetjes en de paprika in reepjes. 3. Smeer de helft van de tortilla in met de bonenspread en beleg met de bosui, paprika, maïs en geraspte kaas. Vouw de tortilla’s dubbel en bak in een droge koekenpan in 8 minuten goudbruin, keer halverwege. 4. Serveer met de Mexican salsa.
