Ortiz anchovies are carefully prepared and filleted one by one. They are caught during the spring fishing season and processed fresh to preserve their full flavor. They then mature for at least 6 months in barrels with salt. At the perfect moment of ripeness they are filleted and packed in olive oil. Thanks to this careful, traditional process we obtain top-quality anchovies. Ideal for those with a demanding taste.
