La Vaquita is made from blue Malbec and white Torrontés grapes that ferment at the same time. It is a natural wine, which means the winemaker lets nature take its course as much as possible. That may sound like less work, but it is definitely not the case. In the vineyard, everything has to be in perfect order to harvest super-healthy grapes, and an absolutely spotless cellar is needed to prevent contamination. The latter is crucial because no, or only a minimal amount of, sulfites are added to natural wine. Sulfites prevent spoilage, but they also influence the taste. The winemaker of La Vaquita wants the grapes and the wine to speak entirely for themselves, so no sulfites.
The result is a bright red wine with fruity Malbec aromas of blackcurrant, cherry, and raspberry and a touch of muscat from the Torrontés grape. A fantastic wine for drinks and lunch. Vaquita means “little cow.”
