This is a wine for lovers of great taste and bon vivants, at least that's what the name refers to. Sybaris was an ancient Greek city in, mind you, southern Italy. Today it is called Sibari. In those ancient days Sybaris was rich. The inhabitants were well off and lived their lives happily. According to Undurraga, that lush feeling of full enjoyment fits this wine. Anyway, it really tastes delicious. Full and soft, with the juicy of black currants and plump purple cherries, a trace of vanilla and a fresh hint of mint. Everything in balance. It goes perfectly with red meat, for example with a spicy Roquefort sauce. Also delicious as a powerful late-evening wine.
