Cava has been the trendy alternative to champagne for a few years now. Not because it is new, because cava has been around for a long time. At Codorníu even since 1850. Then Josep Raventós i Fatjó, a Codorníu descendant, ventured into the bubble. He had visited Champagne and learned how the bubbles come into the wine there. At home in the Penedés he followed the same method. Because Josep used Spanish grape varieties, his sparkling wine had a completely unique look. And cava still has that.
