Sherry is sometimes compared to champagne because of its unique character, complex taste and also because of the complicated way of making wine. Sherry, like champagne, is a blend wine. It consists of wines from various vintages that are mixed according to the so-called solera system. A solera system consists of several layers of vessels. A part of sherry is taken from the bottom layer and bottled. This layer is supplemented with sherry from the layer above, and so on. The new crop will be placed in the top layer.
