Prosecco is a sparkling wine made from the glera grape. In the past, the glera was also called prosecco and this popular bubble owes its name to it. Prosecco is produced according to the so-called charmat method. It starts life as a plain, dry white wine that, once ready, goes into a tank with sugar and yeast. The addition of sugar and yeast causes the wine to ferment again. This creates carbon dioxide that cannot escape from the sealed vessel. The winemaker decides on the pressure of the carbon dioxide. A spumante, such as this AH Excellent Prosecco, is full of bubbles and has a higher pressure than a frizzante. It fizzes softer.
