One sip and you’re sold. It is made from the glera grape. The bubbles form during the so-called second fermentation. Here’s how it works. After the grapes are harvested, a ‘regular’, dry white wine is first made. Once that is ready, this still wine is placed in a tank with sugar and yeast. The yeast works on the sugar, producing alcohol and carbon dioxide. Because this process takes place in a sealed vessel, the carbon dioxide cannot escape, resulting in a wine with bubbles. A delightful wine to enjoy together, with or without something to accompany it.
